Peanut Butter Fudge (easy!!)


If you’re craving something sweet but aren’t in the mood to bake something intricate, this is the dessert for you. Only five ingredients are necessary, but you can add whatever you’re craving. I topped it maple syrup coated candied peanuts (recipe below) to make it the perfect fall treat!

Ingredients:

  • 1 1/3 cup peanut butter
  • 1/2 cup coconut oil
  • 1/3 cup maple syrup
  • 1/4 cup sugar
  • 2 tsp sea salt
  • *optional: candied peanut topping
    • 1 1/2 cups peanuts
    • 3/4 cups water
    • 1 cup sugar
    • 2 tbsp maple syrup

Instructions:

  • Preheat the oven to 350 degrees fahrenheit (only if making candied peanuts for the topping)
  • Line a baking sheet and a 4 by 4 baking pan with parchment paper and set aside
  • Add all of the fudge ingredients (except the sea salt) to a pot and heat over medium, stirring until the coconut oil is melted
  • Add the melted fudge mixture to the 4 by 4 baking pan. Top with sea salt and place in freezer for at least 90 minutes

  • Optional: Candied peanuts instructions
  • In a pot, add the water and sugar and heat over medium, stirring until combined
  • Once the sugar is no longer visible, add in the peanuts. Stir over medium heat for 25 – 30 minutes constantly until the sugar coats the peanuts
  • Once coated with sugar, spread the peanuts onto the baking pan and bake for 30 minutes
  • When they come out of the oven, coat them with the maple syrup and stir; allow them to cool, and they’re ready!

Notes:

  • Potential add ins: vanilla, chocolate chips, rice crispy cereal, powdered sugar, or whatever your heart desires!
  • When making the candied peanuts over the stove, the sugar may clump up too quickly. If this occurs, take them off the heat, add two tbsp of water, stir, and then put them on heat again and continue stirring.
  • Use peanut butter with limited to no oil as the coconut oil will already add enough oil.
